Fresh Berries vs. Jam
I tested this raspberry butter recipe numerous times to get the perfect spreadable texture, vibrant pink color, and punchy flavor. And while I initially thought fresh raspberries whipped into butter would be a delicious combo, it turned out not so great. Fresh berries added too much moisture, making the butter split so it was watery and pretty gross. Instead, I found that some good-quality raspberry jam (I'm a sucker for a jar of Bonne Maman) adds the right amount of moisture and sweet, fruity flavor for airy yet creamy compound butter.

1. Whip the softened butter until it's creamy and fluffy.

Easy Flavor Boost
If you don't want to add any sweetener, feel free to leave out the honey. But I think it adds a lovely floral, sweet flavor that enhances the natural flavor of raspberries.
Essential Tips for Making Compound Butter at Home
- Hand Mixer vs Stand Mixer: I like using my electric hand mixer to whip up this sweet compound butter quickly. Since we're only using one stick of butter, I found that my stand mixer didn't beat the small quantity as efficiently.
- No Mixer, No Problem: You could also use a wooden spoon or a silicone spatula & some elbow grease, but your butter might not be quite as airy.
- Softened Butter: Make sure your butter isn't too hard or too melty, which will cause texture issues when you try to whip it up.


Whipped Honey Raspberry Butter
Ingredients
- ½ cup unsalted butter, softened to room temperature
- ¼ cup raspberry jam
- 1 Tablespoon honey
Instructions
- In the bowl of a stand mixer or in a large mixing bowl, beat the softened butter until it’s fluffy.
- Add the raspberry jam and honey and mix again until everything is well-combined.
- To store, spread the mixed butter in an airtight container. Store in the fridge.
Notes
- Butter: I prefer using unsalted butter, since different brands of salted butter contain different amounts of added salt, so you can't control the flavor. And for a rich flavor, splurge on a high-fat European butter such as Kerrygold.
- Raspberries: While it might be tempting to mix in fresh raspberries, I found that they made the mixture watery & the butter separated. Instead, reach for your favorite good-quality jam for a creamy, cohesive texture.
