I'm kiiiind of obsessed with compound butters, especially fruity ones that can add a little sweetness to baked goods year-round. And this whipped blueberry butter with a little zing of lemon zest is my go-to for slathering on everything from toast & scones to my sourdough discard cornbread.
There are a few tricks that I learned after testing this recipe numerous times to get that perfect vibrant purple color, creamy texture, and fruity flavor. First off, I highly recommend using a good-quality blueberry jam. Fresh berries unfortunately made my blueberry whipped butter watery and separated. If you're set on using fresh blueberries, be sure to simmer them on the stove first until they can be mashed easily, and thicken them with cornstarch.
Beyond the berries, make sure your butter is softened before whipping it up. Otherwise, it won't mix cohesively with the jam, and you could end up with chunks of bland butter that aren't flavored.

Tips For Making Easy Compound Butter
- Equipment: I like using my electric hand mixer to whip up this sweet compound butter quickly. Since we're only using one stick of butter, I found that my stand mixer didn't beat the small quantity as efficiently. You could also use a wooden spoon or a silicone spatula & some elbow grease, but your butter might not be quite as airy.
- Sweetened: I think this lemon blueberry butter is perfectly sweet enough on it's own, but feel free to mix in a little honey to your liking.


Whipped Lemon Blueberry Butter
Ingredients
- ½ cup unsalted butter, softened to room temperature
- ¼ cup blueberry jam
- zest of 1 large lemon
Instructions
- In the bowl of a stand mixer or in a large mixing bowl, beat the softened butter until it’s fluffy after a few minutes.
- Add the blueberry jam and lemon zest and mix again until everything is well-combined.
- To store, spread the mixed butter in an airtight container. Store in the fridge.
Notes
- Butter: Allow your butter to soften room temperature for easy mixing. And for a rich flavor, splurge on a high-fat European butter such as Kerrygold.
- Blueberries: While it might be tempting to add fresh berries, I found that they made the butter watery & split. Instead, reach for your favorite good-quality blueberry jam like Bonne Maman for a creamy texture.
