This luxuriously creamy and light raspberry butter is bursting with flavor from sweet + tangy raspberry jam & a small drizzle of honey. Spread it on everything from buttery croissants to crispy toast!
In the bowl of a stand mixer or in a large mixing bowl, beat the softened butter until it’s fluffy.
Add the raspberry jam and honey and mix again until everything is well-combined.
To store, spread the mixed butter in an airtight container. Store in the fridge.
Notes
Butter: I prefer using unsalted butter, since different brands of salted butter contain different amounts of added salt, so you can't control the flavor. And for a rich flavor, splurge on a high-fat European butter such as Kerrygold.
Raspberries: While it might be tempting to mix in fresh raspberries, I found that they made the mixture watery & the butter separated. Instead, reach for your favorite good-quality jam for a creamy, cohesive texture.
