Meet My Favorite Savory Butter for Bread and Pasta!
I've been making my own compound butters for a while now, and I really wanted one that tastes like a sun-drenched kitchen in Southern Italy surrounded by sunflowers. So with the inspiration of my sundried tomato basil bread's cozy flavors, I created this simple rustic tomato butter. And now my fridge is almost never without it, since I love spreading it on grilled cheese or melting it right into hot noodles.
Now, I tested adding fresh tomatoes so you don't have to, because it was a total mess - bland flavor, split watery butter… let's not go there. Instead, I found that sun dried tomatoes pack in way more tangy, slightly sweet flavor while keeping this tomato spread luxuriously creamy. And just like my 5-minute garlic butter, freshly grated or finely minced garlic adds a punch of savory flavor.

Bold Flavor, Simple Ingredients, Say Less
- Butter: I love using unsalted butter so I can control the amount of salt added to my personal taste preference. And if there was ever a time to splurge on a high-fat European butter, now is that time for an even richer flavor!
- Sun Dried Tomatoes: I recommend shaking off any excess oil from the jar before you chop them. I learned the hard way that adding too much liquid can cause compound butter to be runny or split.
- Garlic: I prefer to grate my garlic cloves on the smallest holes of a box grater or with a micro plane. You can also buy store bought minced garlic in a jar or tube. No one wants a big hunk of raw garlic in their mouth!
- Salt: In recipe testing, I found that fine sea salt or non-iodized table salt distributes more easily compared to kosher salt. And you may need to add more or less salt, depending on how salty your sun dried tomatoes taste.

I prefer mixing everything with a silicone spatula, which makes it easy to scrape the sides & bottom of my bowl. And be careful not to overmix, which can make your sun-dried tomato butter look like it split.


Garlic Sun Dried Tomato Butter
Ingredients
- ½ cup unsalted butter, softened to room temperature
- ½ cup oil-packed sun dried tomatoes, drained and finely chopped
- 2 cloves garlic, grated or finely minced
- ¼ teaspoon fine sea salt
Instructions
- Mix: In a large bowl, mix the softened butter with the chopped sun dried tomatoes and minced garlic until it's well-combined.
- Store: To store, spread the mixed butter in an airtight container. Or spread the butter on parchment paper and shape into a log, then wrap in the parchment paper and store in the fridge.
