This no-bake mint chocolate chip avocado pie taste just like the beloved ice cream! Avocados add a luxurious creamy texture. And the natural green color is perfect to go with the mint chocolate chip flavor. And for another easy no bake pie recipe, try no bake pumpkin pie.

This pie is incredibly simple to make. Just blend everything until it's creamy, then freeze it in the pie crust until it's solid enough to slice!

Best of all, you can use either fresh or frozen avocados. Sometimes fresh, ripe avocados are hard to find, so you can substitute frozen, chopped avocados instead.

The flavor of mint chocolate chip reminds me of childhood. It reminds me of hot summer nights and the welcoming cold of ice cream on my tongue. So as an ode to childhood memories, I decided to make this healthy no-bake mint chocolate chip avocado pie.

Growing up in Germany, Dad's favorite ice cream flavor has always been mint chocolate chip. And this pie tastes just like a mint chocolate chip ice cream, but in pie form.

Ingredients

Pie Crust

  • Walnuts - provide the crunchy texture for the pie crust; you can use any nuts of your choice
  • Dates - sweetens the crust and helps it all stick together; be sure to remove all the pits from your dates
  • Salt - balances the sweetness and brings out the flavor of the cocoa and nuts
  • Cocoa powder - adds a chocolatey flavor to the crust and turns it a rich dark brown color

Pie Filling

  • Avocados - makes the pie super creamy and thick
  • Maple syrup - sweetens the pie; you could substitute honey
  • Coconut oil - since coconut oil is solid when it's cold, it helps the pie hold its firm texture and shape
  • Peppermint extract - adds the essential minty flavor to a mint chocolate chip pie
  • Chocolate chips or chopped chocolate - adds a crunchy texture, just like mint chocolate chip ice cream

How to Make this Recipe

  1. Prepare the pie dish: Grease an 8-inch or 9-inch round pie dish with a little coconut oil.
  2. Blend the pie crust: In a food processor or blender, add all four pie crust ingredients. Blend until it forms small crumbs.
  3. Shape and set the pie crust: Pour the crumb mixture into the greased pie dish. Pat it down with your hands on the bottom and up the sides of the dish in an even layer. Set in the fridge while you prepare the pie filling.
  4. Blend the pie filling: In a food processor or blender, add the avocados, maple syrup, coconut oil, and peppermint extract. Blend for one to two minutes, until the mixture is smooth and creamy.
  5. Add the chocolate: Fold in the chocolate chips.
  6. Spread into the pie crust: Spread the pie filling into the prepared pie crust and smooth the top.
  7. Add toppings: Sprinkle the optional toppings of chopped walnuts and chocolate chips, or any other toppings you prefer.
  8. Freeze then serve: Place the pie in the freezer to set for at least one hour, then slice it up and enjoy. Or eat it right out of the pie dish! It's made from avocados, so it's basically a salad, right??

Recipe Tips

  • Measure the peppermint extract carefully - too much and your pie could taste overwhelming or artificial.
  • Allow your pie to chill and solidify fully in the freezer before slicing into it.
  • Use ripe avocados - not too hard, since unripe avocados won't have the same soft, creamy texture. And don't use overripe with too many brown spots, or else it could ruin the flavor.

Recipe Variations

  • If you don't like the taste of peppermint, you can always leave it out, or substitute it with another flavor like vanilla or coconut extract.
  • Substitute the peppermint extract with a few tablespoons of lime juice and the zest of one lime to make avocado key lime pie!
  • You can make this a crustless pie in a nonstick pie pan or silicon mold.

Storing

Store individual slices wrapped in plastic wrap or in airtight containers. Or store the whole pie in the pie dish wrapped tightly in plastic wrap.

Ingredients
  

Pie Crust

  • 2 cups walnuts (or other nuts of your choice)
  • ⅔ cups dates, with the pits removed
  • ¼ teaspoon salt
  • 1 tablespoon cocoa powder

Pie Filling

  • 2 medium ripe avocados (or 1.5 cups frozen, chopped avocados)
  • ½ cup maple syrup
  • ¼ cup melted coconut oil
  • ¼ teaspoon peppermint extract
  • ½ cup chocolate chips or chopped chocolate

Toppings

  • ⅓ cup chopped walnuts (or other nuts of your choice)
  • ⅓ cup chocolate chips or chopped chocolate (sub vegan chocolate if you're strictly vegan)

Instructions
 

Pie Crust

  • Grease an 8-inch or 9-inch pie dish with a little coconut oil.
  • In a food processor or blender, add all four pie crust ingredients. Blend on a high speed for about 5 intervals of 10 seconds, until it forms small crumbs. When you the squeeze the mixture in your hand, it should hold its shape.
  • Pour the crumb mixture into the greased pie dish. Pat it down with your hands on the bottom and up the sides of the dish in an even layer.
    Set in the fridge while you prepare the pie filling.

Pie Filling

  • In a food processor or blender, add the ripe avocados, maple syrup, coconut oil, and peppermint extract. Blend for one to two minutes, until the mixture is smooth and creamy.
  • Fold in the chocolate chips. Then spread the mixture into the prepared pie crust and smooth the top.
  • Sprinkle the optional toppings of chopped walnuts and chocolate chips, or any other toppings you prefer.
  • Place the pie in the freezer to set for at least one hour, then slice it up and enjoy!
