Chunky Birthday Cake Cookies from Scratch

These rainbow sprinkle birthday cake cookies lean on cake flour for a tender crumb, a heavy hand of brown sugar for moisture, and almond extract for that unmistakable bakery-cake taste. And a quick 1-hour chill in the freezer ensures they bake up soft & chunky every time.

The Birthday Cake Cookies that Taste Better than Cake

I have a strict personal rule: birthday cake is a flavor, not an occasion. So when the craving hits and a full layer cake feels like too much of a production, these cookies are what I make to scratch that itch.

My inspiration goes back to a trip to New York City in 2023, when I finally got my hands on one of Levain Bakery's famous cookies. You know the softball-sized, third-of-a-pound kind that made the whole internet lose its mind? It was thick, underbaked in the best way, and somehow both crisp at the edge and doughy at the center. I came home determined to bring that same chunky, bakery-style texture to a birthday cake cookie, and after a lot of testing, this is the version that stuck.

What makes my version different from the birthday cake cookies you'll find scrolling Pinterest is the whole the structure. Most birthday cake cookies use a standard chocolate chip cookie base and just swap in rainbow sprinkles and almond extract. But to really build up from a cake-inspired formula, mine use cake flour for a finer, more tender crumb, a heavier lean on brown sugar for moisture, and a mandatory freezer chill to keep the dough cakey inside & prevent it from spreading thin. The result is a cookie that genuinely tastes like the batter you'd sneak off the mixing spoon, and not just a chocolate chip cookie wearing a party hat.

And if you want something nearly effortless, my German chocolate cake cookies are made with a boxed cake mix and a handful of pantry staples, so you can have a batch in the oven in minutes.

My Baking Tips for the Chewiest Cookies

  • Don't skip chilling the dough, otherwise your cookies could spread too much in the oven and become thing and crispy.
  • Use jimmies sprinkles (long rod shapes) and not nonpareil sprinkles (small round shapes) to prevent the color from bleeding out of the rainbow sprinkles.
  • I recommend to slightly underbake the cookies so they're still a little gooey inside. Take them out of the oven when just the bottom edges are golden.
  • I like adding white chocolate chips for a little extra crunch and the flavor is light, like bday cake frosting. If you prefer, you can swap in semisweet chocolate chips or chopped cashews instead, or leave them out completely.
  • Almond extract in the dough adds that recognizable birthday cake flavor, so I highly recommend it here, but you can use vanilla extract in a pinch.

Ingredients
  

  • 1 cup unsalted butter, cubed and cold in the fridge (2 sticks)
  • ½ cup granulated sugar
  • 1 cup brown sugar
  • 1 cup white chocolate chips
  • 1¾ cups all purpose flour
  • 1¼ cup cake flour
  • ¾ teaspoon salt
  • ½ teaspoon baking soda
  • 2 large eggs (whisked separately in a small bowl)
  • 1 teaspoon almond extract
  • ⅓ cup rainbow sprinkles

Instructions
 

  • Add the cold cubed butter into a bowl and break it up just for 30 seconds with an electric hand mixer or with the paddle attachment in a stand mixer.
  • Add the granulated sugar and brown sugar. Mix until the sugar is distributed and coating the butter, after about one minute.
    Add the white chocolate chips. Mix just for 10 seconds to distribute.
  • Add the all-purpose flour, cake flour, salt, and baking soda. Mix until it forms fine crumbs, after one to two minutes. It's okay if there are some larger chunks as well.
  • Add the whisked eggs and almond extract. Mix just until the dough comes together, for about one minute. It should still be chunky and not entirely smooth.
    Add the rainbow sprinkles and mix the dough again just until the sprinkles are distributed, after about 10 seconds.
  • Gently press the dough into 12 evenly-shaped balls in the palms of your hands and spread them out on a large baking sheet lined with parchment paper. The dough balls should be big, about 2 inches in diameter.
    Freeze for at least one hour, or until you're ready to bake your cookies.
  • Preheat the oven to 350°F.
  • Take the baking tray out of the freezer and let it sit on the counter at room temperature while the oven preheats. The cookie dough will remain frozen, but the baking tray can warm up a bit so the temperature difference isn't too drastic.
  • Bake the cookies for 15 to 20 minutes, just until the bottom edges become golden. Let cool for 5 minutes, then enjoy!!
