For rushed mornings, I make this quick and easy almond butter oatmeal with fresh or frozen blueberries and quick-cooking oats. It's creamy, salty-sweet bowl, filling, and ready in just 5 minutes!

The 5-Minute Breakfast I Make All Week!
Oatmeal has been my go-to breakfast for over half a decade, since it's an inexpensive + delicious way to fuel my mornings. So I created this one-bowl breakfast to balance creamy quick-cooking oats, juicy blueberries, and nutty almond butter. Throw on some extra chopped nuts or chocolate chips for added crunch, and you've got yourself a mighty breakfast of champions!
The blueberries are optional, and feel free to swap in whatever berries you have on hand. Frozen ones work great too, since they warm and soften in the boiling water with the oats. And if you want breakfast to lean savory, try my caramelized mushroom oatmeal next!


Recipe Tips from My Kitchen
- More Fruit: Instead of berries, sometimes I swap in chopped fruit like apples & pears.
- Super Creamy: For creamier oats, soak them in hot milk instead of water. I usually use homemade almond milk with my oatmeal.
- Soaked: Oats contain phytic acid, which can decrease nutrient absorption in our bodies. If I have the time, I'll soak my uncooked oats in room temperature water on the counter overnight (for 7 to 10 hours) to neutralize that phytic acid. Then I drain the oats before adding them to my breakfast bowl with the boiling water.


Almond Butter Oatmeal with Blueberries

Ingredients
- ¾ cup quick-cooking oats
- 1 pinch salt
- ¼ teaspoon ground cinnamon
- boiling water (enough to cover the oats)
- ½ cup blueberries, fresh or frozen
- ¼ cup sliced almonds (or other chopped nuts)
- 2 Tablespoons almond butter
- 3 Tablespoons honey or maple syrup, for drizzling
Instructions
- If you're using frozen blueberries, place them in a microwave safe bowl and microwave on 30 second internals until they are thawed and warm. Set aside.
- Place the oats, salt and cinnamon in a bowl. Pour boiling water on the oats, just enough to bring the water line to the top of the oats. Let sit for 1 minute.
- Top with blueberries, sliced almonds, almond butter and a drizzle of honey or maple syrup. Enjoy!!
Notes
- Storing: Hot oatmeal is best eaten right away. You can save it in the fridge for a day or two, and reheat it in the microwave.
- Optional Mix-In's: Once my oats become creamy, I like to stir in protein powder, chia seeds, jam, mashed banana, or apple sauce.
- Optional Toppings: And for added crunch, I like to sprinkle granola, shredded coconut, chocolate chips, or chopped nuts on top before digging in.
