Creamy Almond Butter Oatmeal with Blueberries

You'll be looking forward to this healthy bowl of almond butter oatmeal with blueberries before you even go to bed! This creamy, salty-sweet bowl of oats is the perfect way to fuel your body for the day ahead.

Oatmeal is my favorite breakfast, and I also love to enjoy it Pumpkin Pie Overnight Oats and Almond Cashew Chocolate Granola with Homemade Oat Milk.

About this Recipe

Oatmeal has been my go-to breakfast for over half a decade and I'm even more obsessed with it now than ever before. It's an inexpensive and healthy way to fuel your body with fiber and energy for the day ahead.

This recipe is a delicious balance of creamy oats, sweet blueberries and salty almond butter. Throw on some nuts for added crunch and you've got yourself a mighty breakfast of champions!

Oh, and did I mention your creamy almond butter oatmeal will be ready in 5 minutes? Go ahead and sleep in a little extra! 🙂

If you want more delicious oatmeal breakfast recipes, I also recommend sweet oatmeal with stewed fruit or savory oatmeal with caramelized onions. And for dessert, try a baked Vegan Apple Crisp!

Ingredients and Notes

  • Quick-cooking oats - Feel free to use rolled oats or instant oats instead. Just allow your rolled oats to soak an extra minute in the hot water before digging in.
  • Salt - Just a pinch brings out the flavors of the rest of the ingredients.
  • Cinnamon - Adds a warm spiced flavor to this oatmeal.
  • Boiling water - There is no exact measurement for the water since it can depend. Add just enough water to meet the top of the oats. Too much water will result in soupy oatmeal.
  • Blueberries - Both fresh and frozen blueberries work well in this oatmeal.
  • Sliced almonds - Feel free to use any type of nuts or seeds.
  • Almond butter - You can use any type of nut butter or seed butter like peanut butter. Or make homemade chocolate almond butter.
  • Honey or maple syrup - Use maple syrup or substitute brown sugar to keep this blueberry almond butter oatmeal vegan.

How to Make Oatmeal

  1. Mix: Place the oats, salt and cinnamon in a bowl.
  2. Soak: Pour boiling water on the oats, just enough to bring the water line to the top of the oats. Let sit for 1 minute.
  3. Enjoy: Top with blueberries, sliced almonds, almond butter and a drizzle of honey or maple syrup. Enjoy!!

Recipe Tips

  • Frozen Berries: If you're using frozen blueberries, you can microwave them in a microwave-safe bowl for 30 to 60 seconds, to ensure they're soft and warm.
  • Other Fruit: Instead of blueberries, you can use any berries or chopped fruit like apples or pears.
  • Other Nuts: Instead of almonds, I've found that walnuts, cashews and pistachios also taste great on oatmeal with almond butter.
  • Storing: Hot oatmeal is best eaten right away. You can save it in the fridge for a day or two, and reheat it in the microwave.
  • Milk: For creamier oats, soak them in hot milk instead of water. I usually use homemade almond milk with my oatmeal.

Oatmeal is so versatile that if you do get bored with a flavor, just add different mix-ins or toppings! Here are some ideas for you:

  • Chia seeds
  • Jam
  • Mashed banana
  • Apple sauce
  • Berries
  • Chopped fruit

Optional Toppings

  • Granola
  • Shredded coconut
  • Extra drizzle of honey or maple syrup
  • Dark chocolate or semi-sweet chocolate chips
  • Nut or seed butter
  • Chopped nuts

Frequently Asked Questions

Is almond butter a healthy fat?

Almond butter is high in monounsaturated fats which help to lower LDL “bad” cholesterol and raise HDL “good” cholesterol. I especially love drizzling or dolloping on Wild Friends Almond Butter, because it contains zero palm oil and zero added sugar.

What is the ratio of water to oatmeal?

I don't measure my water when making oatmeal since the amount of water depends on how thick or thin you like your oatmeal. I add just enough water in the bowl to just barely cover the oats. This results in creamy oatmeal.

Should I soak oats in water?

Oats like many grains and legumes contain phytic acid, which can decrease nutrient absorption in our bodies. Soak uncooked oats in room temperature water on the counter overnight (7 to 12 hours) to neutralize phytic acid. Drain the oats then use them in your breakfast as normal.

What type of oats are best for oatmeal?

I love quick-cooking oats because they become really creamy after sitting for just a minute in hot water. I usually save thicker rolled oats or old fashioned oats for baking in Healthy Cowboy Cookies, Vegan Baked Apple Oatmeal Bars and Strawberry Baked Oatmeal with Caramel.

Ingredients
  

  • ¾ cup quick-cooking oats
  • 1 pinch salt
  • ¼ teaspoon ground cinnamon
  • boiling water; enough to cover the oats
  • ½ cup blueberries, fresh or frozen
  • ¼ cup sliced almonds
  • 2 tablespoon almond butter
  • 3 tablespoon honey or maple syrup, for drizzling

Instructions
 

  • If you're using frozen blueberries, place them in a microwave safe bowl and microwave on 30 second internals until they are thawed and warm. Set aside.
  • Place the oats, salt and cinnamon in a bowl.
  • Pour boiling water on the oats, just enough to bring the water line to the top of the oats. Let sit for 1 minute.
  • Top with blueberries, sliced almonds, almond butter and a drizzle of honey or maple syrup. Enjoy!!

    Honestly didn’t even know recipes like this existed lol. I’ve been tryin to make more homemade food lately instead of those oatmeal packets from the store which are rly easy but def not the healthiest. This was so quick to make I’m lowkey mad I been buying those oatmeal packets so long haha.

      Homemade oatmeal beats the packets any day of the week! You can make juuust the right quantity for yourself, and customize the toppings to your heart's content.
