

Oatmeal – The Breakfast of Champions
Hello! Doesn’t this blueberry almond butter oatmeal emit the most “good morning” vibes ever!? Oatmeal has been my go-to breakfast for over half a decade and I’m still not even close to being sick of it. It’s a cheap and healthy way to fuel your body with fiber and energy for the day ahead. And oatmeal is so versatile that if you get bored with a flavor, just mix it up! One of my favorite oatmeal breakfasts is comprised of blueberries (usually frozen from summer’s blueberry picking trip and heated in the microwave) along with a natural nut butter. It’s a delicious balance of creamy oats, sweet blueberries and salty nut butter. Throw on some chopped nuts for added crunch and you’ve got yourself a mighty breakfast of champions!


A Healthy Start to the Morning
Blueberries
I love adding fresh or frozen fruit to my oatmeal. Blueberries are a common staple in our home because we try to pick bucket-loads during the summer here in Oregon. We store most of them in the freezer and they’re a delicious treat the rest of the year. Blueberries contain antioxidants along with Vitamin C and Vitamin K. Of course, feel free to add any berries or chopped fruit that you like!
Oatmeal
The underrated star of this healthy breakfast bowl is the oats. I love quick-cooking oats because they become really creamy after sitting for just a minute in hot water. But my husband prefers rolled/old-fashioned oats, which are bigger and therefore maintain more of their chewy texture after being cooked. Oats fuel your body with soluble fiber, and they’ve been shown to help lower LDL cholesterol and lower blood sugar levels.
Almonds & Almond Butter
My favorite way to add extra protein to a bowl of oatmeal is with nuts and nut butter. I especially love drizzling or dolloping on Wild Friends Almond Butter, because it contains zero palm oil and zero added sugar. A handful of whole or chopped nuts provides a great texture contrast to oatmeal. And nut butter comprised of just nuts and a little salt is my go-to for creating a luxuriously decadent breakfast packed with nutrients!

Blueberry Almond Butter Oatmeal
Ingredients
- ¾ cup quick-cooking oats
- 1 pinch salt
- ¼ tsp ground cinnamon
- boiling water; enough to cover the oats
- ⅓ cup blueberries, fresh or frozen and thawed in the microwave
- ¼ cup sliced almonds
- 2 Tbsp almond butter
- honey or maple syrup, for drizzling
Instructions
- Place the oats, salt and cinnamon in a bowl.
- Pour boiling water on the oats, just enough to bring the water line to the top of the oats. Let sit for 1 minute.
- Top with blueberries, sliced almonds, almond butter and a drizzle of honey or maple syrup. Enjoy!
