water (either 1 cup or 2 cups, according to your rice cooker's instructions)

Instructions
Rice Cooker Method
Wash the rice in water and drain three times.
Combine the rice, salt, minced garlic and either 1 cup or 2 cups of water (according to your rice cooker's instructions) in a rice cooker.
Cook until the water has been absorbed and the rice is tender, according to your rice cooker's instructions.
Add the olive oil, chopped cilantro, and lime juice. Mix to combine and enjoy!!
Stove Top Method
Wash the rice in water and drain three times.
Combine the rice, salt, minced garlic, and 1.5 cups water in a medium saucepan over high heat and bring to a boil.
Reduce the heat to medium low heat and simmer, covered with the lid, for about 20 minutes, until the water has been absorbed and the rice is tender.
Add the olive oil, chopped cilantro, and lime juice. Mix to combine and enjoy!!
Notes
Water: To determine how much water to add to your rice, read the instructions for your rice cooker. Some rice cookers recommend 1 cup of water for every 1 cup of rice, while others recommend 2 cups of water for every 1 cup of rice.
Cilantro: Wait to add the cilantro until after the rice is done cooking. If the cilantro gets cooked with the rice, it can become mushy and lose some of its flavor.
Broth: I've also tested this recipe with the rice cooked in broth instead of water for a richer, savory flavor. Just reduce the amount of salt as needed.
