These delicious Spicy Peanut Butter Noodles are ready for a weeknight dinner in just 30 minutes! They're packed with flavor & topped with a creamy peanut sauce.
2tablespoonfreshly squeezed lime juice (from 1 whole lime)

16ouncesrice noodles
¼cupchopped nuts(almonds, peanuts and cashews all work great)
1cupedamame
1red bell pepper, thinly sliced
1cupshredded carrots (from about 2 large carrots)
1cupshredded red cabbage

Instructions
Prepare the Peanut Butter Sauce
In a medium-sized bowl, mix all the peanut butter sauce ingredients until smooth and creamy. Set aside.
Prepare the Rice Noodles
Hydrate the rice noodles for 20 to 30 minutes in a large bowl of boiled hot water. Or boil the noodles in a large pot of boiling water for 5 to 10 minutes. Drain the noodles and return them to the large bowl or pot.
Mix the Noodles
To the bowl or pot of noodles, add in the ¼ cup chopped nuts, edamame, bell pepper, carrots, and red cabbage.Pour the peanut butter sauce on top and mix everything with large tongs or spoons until the noodles and vegetables are fully coated.
Top with additional chopped nuts, sliced green onions, cilantro and lime wedges. Enjoy!
Notes
Add more spice by increasing the amount of sriracha in the sauce or topping your noodles with red pepper flakes or chili oil.
Add fresh cilantro, chopped nuts and freshly squeezed lime juice on leftovers. This makes them taste like they're fresh again!
Creamy natural peanut butter tends to be the easiest to make a sauce with, since it's thinner than other types of peanut butter.
Store leftovers in an airtight container in the fridge for up to 5 days. This dish tastes great served hot or cold.
