Made with only six ingredients, these easy German chocolate cake mix cookies are so chewy, gooey, and delicious! Loaded with shredded coconut, pecans, and dark chocolate chips, these cookies are ready from start to finish in just 30 minutes!
1box German chocolate cake mix (13.25 oz)(I usually use the brands Betty Crocker & Duncan Hines)
1cupchopped pecans
1cupsweetened shredded coconut
1cupdark chocolate chips
Instructions
Preheat the oven to 350°F. Line a baking sheet with parchment paper.
In a large mixing bowl, whisk the eggs and vegetable oil. Add the box of cake and mix until it’s combined. Fold in the chopped pecans, shredded coconut, and chocolate chips.
Use a large cookie scoop or two large spoons to shape the dough into balls. Spread them out on your prepared baking sheet at least 2 inches apart.
Bake for 12 to 14 minutes. Allow the cookies to cool on the baking sheet for a couple minutes, then transfer them to a cooling rack to cool completely. Enjoy!!
Notes
Mixing: The dough is pretty thick, but just stir it gently in big scooping motions with a large spoon or silicone spatula.
Chilling: I tested this recipe with chilled dough too, and it didn’t make much difference in the texture or flavor. So save time and bake your cookies straight away.
Even Baking: Make sure all your cookies are the same size, so they bake evenly at the same time.
Storing: Store cooled cookies in an airtight container at room temperature for up to 5 days or in the freezer for up to 3 months.
