Kick start your morning with a Peanut Butter Avocado Smoothie Bowl. It's full of nutrients, fiber & hidden veggies that you won't even taste! Frozen bananas, avocados and zucchini make this healthy smoothie bowl extra thick and creamy.
¼cupoat milk (or other non-dairy milk of your choice)
2tablespoonpeanut butter (or use any nut or seed butter of your choice)
1tablespoonmaple syrup
Toppings
more nut or seed butter, granola, nuts or seeds, shredded coconut, and honey or maple syrup for topping (optional)
Instructions
To make the frozen steamed zucchini, wash and slice a few zucchini into 1-inch chunks. Boil water in a saucepan on the stove over high heat. Place the zucchini in a steamer basket over the saucepan. Steam the zucchini for 15 minutes, until easily pierced with a fork. Set aside to cool to room temperature, then store in the freezer in an airtight container or freezer safe bag.
In a blender or food processor, blend all the smoothie bowl ingredients together until it is thick and creamy. Scrape the sides as necessary to ensure everything is blended together.
Pour into two separate bowls, then top with any toppings you desire. I like to add an extra drizzle of maple syrup, shredded coconut, a dollop of peanut butter, and chopped nuts. Enjoy!!
Notes
Scrape down the sides of your blender with a spoon or rubber spatula several times while blending your smoothie to ensure everything is creamy.
If your smoothie is too thick, add one tablespoon of milk at a time.
If your smoothie is too thin, add more frozen banana, avocado or zucchini.
Store any leftover smoothie in the fridge for up to two days in an airtight container or covered with plastic wrap.
