Now listen, I've tested this recipe both with and without an ice cream machine. And after spending the past four years in my kitchen developing foolproof recipes for beginner home cooks, the last thing I want to create is something that requires a fancy gadget or appliance. So all you need for this recipe is a blender and a freezer!
Why You'll Love this Recipe
- While you can make this vegan frozen yogurt in an ice cream maker, it's not required. Everything comes together in a blender or food processor.
- It's suuuper creamy!
- You can enjoy this frozen dessert year round, but it's especially refreshing on hot summer days.
- It's versatile, so you can switch out the flavors to your heart's content.
Ingredients
- Full-fat coconut milk - Don't use light or low-fat coconut milk, since it won't result in the same thick and creamy texture.
- Frozen berries - I like using a blend of frozen strawberries, blueberries, raspberries and blackberries. But you can use any frozen fruit of your choice.
- Granulated sugar - You can substitute coconut sugar or maple syrup.
- Lemon - Adds a bright and zingy citrus flavor to balance the sweet berries and tangy Greek yogurt.
- Dairy-free plain Greek yogurt - You can use other types of vegan yogurt, but I find Greek yogurt freezes best due to its slightly higher fat content. And since it's thicker, it creates more creamy texture.
How to Make Vegan Frozen Yogurt
- Refrigerate the coconut milk: Put the full-fat coconut milk in the fridge to chill and solidify overnight.
- Combine the ingredients: In a blender or food processor, combine the solid part of the chilled coconut milk (not any remaining liquid in the can), frozen berries, sugar, lemon juice, and dairy free yogurt.
- Blend until smooth: Blend on high speed, scraping down the sides with a spoon or silicon spatula frequently, until everything is well-blended and creamy, after about 5 to 10 minutes.
- Chill: Scrape everything into a freezer safe container, cover with a layer of plastic wrap or parchment paper, and freeze for at least 4 hours.
Topping Ideas
- Drizzle of peanut butter or homemade chocolate almond butter
- Chocolate chips
- Fresh or frozen berries
- Homemade caramel sauce
- Shredded coconut
- Chopped nuts like peanuts or walnuts
- Almond cashew chocolate granola
- Sprinkles
Recipe Tips
- Blending: Scrape down the sides of your blender or food processor several times to ensure everything is evenly blended.
- Fresh Berries: If you only have fresh berries, wash and dry your fruit, then lay it out in a single layer on a baking sheet or large plate. Freeze for at least 8 hours. For more tips, read my full post on how to freeze berries.
- Scooping: Place your ice cream scoop in warm water for a few seconds to make scooping out ice cream much easier.
Recipe Variations
- Tropical Fruit: You can change up the frozen fruit. Make a tropical flavored frozen yogurt with frozen mango and lime juice.
- Extra Creamy: Blend in frozen sliced bananas for extra creaminess.
- Sweetened: If you use sweetened yogurt instead of plain yogurt, you can leave out the sugar since it should be sweet enough.
Storing
This berry vegan frozen yogurt is best stored in the freezer, for up to one month.
Place some plastic wrap or parchment paper snugly on top of your vegan frozen yogurt to prevent ice crystal formation.
Frequently Asked Questions
What texture is vegan frozen yogurt?
I find that vegan frozen yogurt is often a hit or miss on texture. Sometimes it's too icy and hard. But this vegan frozen yogurt recipe is made from non dairy Greek yogurt and full fat coconut milk, so it's super creamy and velvety.
Why is my frozen yogurt icy?
If you just freeze berries without enough fat mixed in, the water will crystalize causing your dessert to be hard and icy. To replace the fat from heavy cream and eggs in standard ice cream recipes, I recommend using full-fat, non-dairy alternatives. The fat in Greek yogurt and coconut milk helps prevent the formation of ice in this recipe.
Can you just freeze yogurt to make frozen yogurt?
Yes! Yogurt freezes well and keeps its creamy texture when frozen. You can freeze yogurt on a baking sheet to make frozen Greek yogurt bark.
