It’s the third and final day of Eid! 🌙 It’s been weird readjusting to eating during the daytime after Ramadan 😅 And just like the past few years, I underestimated how much I’ll miss Ramadan once it’s over. ❤️ Ramadan is nearly over! 😭 Can you believe it!? 🥺 Last weekend I made a Middle Eastern classic to bring to my in-law’s home. Except it had a slight twist since both my father-in-law and myself don’t do great with dairy. 😅 Say hello to VEGAN KNAFEH! 👋🏽 I “knead” more bread in my life! 🍞🤪 “Hoppy” Easter 🐣🐰 It’s snowing outside today - in mid-April! ❄️ What in the world is going on!? I’m excited though because I’m 100% here for any excuse to cozy up with a warm blanket, a good book and some yummy toast. 🍞 My hubbie and I went to Disney World for our honeymoon last year, since international travel was still dicey with covid. Now we get to go back to Disney World this winter to celebrate my Dad’s hard-earned, long-awaited retirement! I can’t wait to watch my Dad laugh and run around like a joyful kid to all ride all the rides and eat all the churros 🥲🥰 These oat and peanut butter energy bites are my new favorite snack!! No-Bake Mint Chocolate Chip Pie!! 🥧 The weather is playing tug-of-war between sunny & almost warm and then dark, rainy and freezing. But it’s okay, because Spring is nearly here! And on colder days, I still enjoy the weather with a cozy meal like these super simple poached pears with yogurt.

I’ve come a long way from eating disorders and obsessing about what went into my body. Now I focus on what nourishes my body and soul – sometimes that means a kale smoothie and sometimes that means a chocolate peanut butter pie milkshake.
