Oatmeal has been my go-to breakfast for over half a decade and I'm even more obsessed with it now than ever before. It's an inexpensive and healthy way to fuel your body with fiber and energy for the day ahead.
This recipe is a delicious balance of creamy oats, sweet blueberries and salty almond butter. Throw on some nuts for added crunch and you've got yourself a mighty breakfast of champions!
If you love oatmeal, I also recommend oatmeal with stewed fruit or even savory oatmeal with caramelized onions. And if you don't feel like turning on the stove, try some easy overnight pumpkin pie oats!
Oh, and did I mention your breakfast will be ready in 5 minutes? Go ahead and sleep in a little extra. ?
Ingredients
- Quick-cooking oats - Feel free to use rolled oats or instant oats instead. Just allow your rolled oats to soak an extra minute in the hot water before digging in.
- Salt - Just a pinch brings out the flavors of the rest of the ingredients.
- Cinnamon - Adds a warm spiced flavor to this oatmeal.
- Boiling water - There is no exact measurement for the water since it can depend. Add just enough water to meet the top of the oats. Too much water will result in soupy oatmeal.
- Blueberries - Feel free to use fresh or frozen berries or chopped fruit of any kind. If using frozen fruit, thaw it in the microwave on 30 second internals before adding it to the oats.
- Sliced almonds - Feel free to use any type of nuts or seeds. Walnuts, cashews and pistachios also taste great in this recipe.
- Almond butter - You can use any type of nut butter or seed butter.
- Honey or maple syrup - Use maple syrup to keep this blueberry almond butter oatmeal vegan.
How to Make this Recipe
- If you're using frozen blueberries, place them in a microwave safe bowl and microwave on 30 second internals until they are thawed and warm. Set aside.
- Place the oats, salt and cinnamon in a bowl.
- Pour boiling water on the oats, just enough to bring the water line to the top of the oats. Let sit for 1 minute.
- Top with blueberries, sliced almonds, almond butter and a drizzle of honey or maple syrup. Enjoy!!
Oatmeal is so versatile that if you do get bored with a flavor, just add different mix-ins or toppings! Here are some ideas for you:

FAQ's
Almond butter is high in monounsaturated fats which help to lower LDL “bad” cholesterol and raise HDL “good” cholesterol. I especially love drizzling or dolloping on Wild Friends Almond Butter, because it contains zero palm oil and zero added sugar.
I don't measure my water when making oatmeal since the amount of water depends on how thick or thin you like your oatmeal. I add just enough water in the bowl to just barely cover the oats. This results in creamy oatmeal.
Oats like many grains and legumes contain phytic acid, which can decrease nutrient absorption in our bodies. Soak uncooked oats in room temperature water on the counter overnight (7 to 12 hours) to neutralize phytic acid. Drain the oats then use them in your breakfast as normal.
I love quick-cooking oats because they become really creamy after sitting for just a minute in hot water. But rolled oats or old fashioned oats are also great since they maintain more of their chewy texture after being cooked.
